I
made the quinoa
curry on Tuesday and didn't think that meal could be
bettered, but now having this, I think it's my favourite deliciously Ella meal so far.
The green
curry paste is
made with small green Thai chiles, but serranos
make a
good substitute.

Typically,
curry sauce is
made with a blend of spices and to get a
good blend for me, is a juggling act.
As with all
good things in life, it is a very simple soup
made with carrots, coconut milk and
curry powder with a little ginger thrown in and takes just 10 minutes of effort.
And when I finally get around to
making my own red
curry paste, I'll share it with you too (or you can try this one from The Wicked
Good Vegan or this one from Food & Spice and let me know how it is!).
This soup is healthy and nutrient - rich, quick to
make (only 30 minutes) and the
best part that it's totally customisable: try with sage, bay leaf, summer savory, smoked paprika,
curry, cinnamon or even cardamom!
1 green (or semi-ripe) plantain 1 cup dried aduki beans, soaked overnight and left to sprout * 1/2 cup red lentils, rinsed 150 g snake beans, cut into 5 - cm [2 - inch] pieces 1 tablespoon
curry powder 1/4 teaspoon asafoetida (hing), optional 1 tablespoon minced ginger (
make your own) 1 small / medium onion, sliced or diced (optional) 2 cloves garlic, finely chopped or minced (optional) 10 — 12 fenugreek seeds 6 — 7
curry leaves (fresh or dried or substitute with 1 bay leaf) 2 — 3 Roma tomatoes, diced (fresh or canned is also
good) 6 — 7 sprigs fresh thyme (or use 1 teaspoon of dried thyme) Salt to taste 2 — 3 tablespoons coconut (or vegetable) oil 4 — 5 bunches of fresh coriander (cilantro) for garnish
To
make the chicken pumpkin
curry, you only need chicken, pumpkin, onion, coconut milk and a
good Thai yellow
curry paste.
Generally a soup would
make it
better, but here, lots of fresh ginger, chili,
curry, red lentils, pumpkin and root vegetables, so
good for a sore throat.
The milk
makes a great base for smoothies, soups, and
curries; the oil is a great source of saturated fat that stands up
well to heat; the water beats commercial sports drinks with its impressive electrolyte content; the nut itself can be used as a projectile weapon.
I thoroughly enjoyed
making and eating this vegan creamy
curry mushroom soup — the
curry and the coconut work so
well with the mushrooms and
make for a delicious combination with the fresh coriander.

When my
best friend Lindsey and I lived together in college, this
curry made an appearance at least once a week.
But I myself and several parties who have visited India will be glad to recommend Madras
Curries as
best; and Ceylon Singhalese Curry (yellow) is
good,
made of cocoanut juice, Maldive fish, lemon, Curry leaves, saffron, etc..
The meat in Ceylon is generally too tough to be
good, but you can with safety
make your meal off
curry and fish, as the fish, although not equal to what you get in Europe, is excellent if
well cooked.
This dish
makes a lot of
curry, but it freezes
well.
Make your own
curry powder, or buy an imported powder from India for the
best results because American
curry powders are inferior.
The
curry powder you use can
make all the difference, so get yourself a
good one.
My love of food stems from family, so obviously you'll find a few family favorites, like my grandmother's insanely delicious Brinjal
curry (V+GF), mom's comforting Coconut Congee (V+GF) that we eat ONLY on
Good Friday, or the Vegetable Stir - fry that my sweet dad
made for my vegetarian mom to thank her for cooking meat for us.
I
make curry quite regularly for dinner because apart from the fact that I love
curry, it is also super easy & quick to
make as
well as pleasing the entire family.
I haven't
made Thai
curry in a long time, and this looks so
good!
He brought so much I did

curried parsnip and carrot soup which was
good but not bloggable

And if you don't
make your own
curry paste,
make sure to buy something of
good quality, it is worth it to pay two or three Euro more in this case, I think, it really
makes a difference.
This is all a little ironic to me, because I've tried to
make red
curry a few times before (non-vegan with chicken) and it has never turned out this
well!

made with green Thai chiles, but serranos
make a
good substitute.
