This method of
making chile sauce differs from
others using fresh New Mexican
chiles because these
chiles aren't roasted and peeled first.
It is the fresh
chiles that are ground up with
other ingredients to
make the famous Thai curry pastes, but rehydrated dried
chile can be substitued in a pinch.
Much of the ground
chile and the ristras sold around Chimayo are likely to be
made from Hatch
chiles — though you can buy Chimayo and
other native
chiles at the local farmers» markets.

Fry found the paste — nam prik pao — in an Asian market and started adding

make a Parsley Pesto: add 2 cups packed fresh flat - leaf parsley leaves (about 3 ounces) to the herbs, and instead of almonds and pine nuts, use 1/4 cup (1 ounce) walnuts — or more if you want a richer pesto.
