I've not experimented with the oats in any way other
than to
make deliciously chewy, hearty
oatmeal!
One of the reasons I love
oatmeal cookies is that great chew (not crunch) factor, so I'd love to find a way to
make these chewy soft, rather
than cakey soft.
I added a little less
than 3/4 c sugar, added 1/2 c
oatmeal along with the flour, and sprinkled in blueberries at the end to
make it breakfast - y.
If it
makes you feel any better, I
made oatmeal cookies this weekend, and my husband and I polished off a whole batch in less
than 24 hours!
I think I might have to have a waffle party.But I don't know that anything could be better

Maypo is much more versatile
than other instant
oatmeals because it's sold in boxes versus individual packets,
making it easier for cooking and you can prepare as much as you like.
Without knowing anything about the recipe you
made it's hard for me to comment, but baked
oatmeal has a different, heartier texture
than muffins.
The morning I
made this Raspberry Blueberry
Oatmeal Cake, my husband was actually having a business meeting at our home, so his colleagues were more
than happy to sample and devour this cake.
As per the recipe, the
oatmeal uses only 1 cup of pumpkin puree, so the size of the can doesn't
make a difference (the smallest can will have more
than 1 cup in it).
I only
made two little changes to her recipe: I used a mix of finely ground
oatmeal and white spelt flour for the batter and baked them in little muffin tins for easier serving rather
than in one large baking tin.
This breakfast bake will
make a believer (read: an
oatmeal lover) out of even the biggest critic... mostly because it has the fluffy and moist texture of a cake / muffin rather
than the gloopy and wet (mmmm) texture that's usually associated with
oatmeal...

oatmeal without it at your own risk.
While I've heard that flaxseeds can taste a tad fishy, I really didn't notice a big difference when I added them to my
oatmeal, other
than that they
made the texture a little more gummy.
When
making oatmeal, quick oats cook in less
than five minutes which
makes them a good choice for a quick breakfast.

made at home that's for sure!

My only issue with
oatmeal is it's very little protein so tends to
make me hungry for lunch earlier and a feeling a bit weaker in the morning
than I would like.
You can always add more or less almond milk and almond butter to
make it more
oatmeal - ish or cereal - ish
