I'm
making all of my family's traditional holiday sweets for my friends for Christmas (
caramel, mock toffee, and
peanut butter balls).
If I was Elvis Presley, there would also be
caramel and
peanut butter involved, and I would have to deep - fry the whole thing as well... when I was eating it I actually imagined how good it would taste with
peanut butter, so I've
made a little recommendation in the recipe if you want to take it down that route!
The
caramel sauce is
made with water, honey, brown sugar, and
peanut butter but the sugar content is fairly low.
Needless to say, she did not come empty handed, but brought a cake
made of stacked
peanut -
butter - banana cookies with chocolate and toffee chips,
caramel frosting, and caramelized banana topping.
I've
made three variations so far and they're all pretty great — the one with
peanut butter and sunflower seeds is a basic cupboard - staple option with a sweet
caramel undertone, cocoa with cherries is always a lovely combo and satisfies my sweet - tooth quite perfectly, and the mandarin - pistachio - cranberry - goji is the most colorful and sparkles with fruity flavor.
This vegan Salted
Caramel is
made from dates and
peanut butter,
making it a super healthy and clean eating treat that's perfect to sweeten any dessert or breakfast.
I had some leftover
Peanut Butter Caramel Sauce, so I diluted it with a little cream the next day (Since it had become much more thicker by then) and heated it, poured it over some vanilla ice - cream and
made myself Brownie A La Mode — Heaven on a plate!
The coconut sugar and the vanilla help give a warm toffee
caramel undertone while the
peanut butter makes it feel and taste rich!
Warm dates, and
peanut butter come together to
make a sweet
caramel, while gluten free crispy rice cereal adds an extra crunch.
A more creamy
caramel can be
made with addition of almond
butter (or
peanut, etc) and water if no almond milk available.
In the meantime,
make the date
caramel by adding the dates,
peanut butter, 1 tablespoon of coconut oil and 1/4 cup sweetener into the food processor and process on high until smooth.
My favorite is to
make three flavored: chocolate,
peanut butter, and salted
caramel.
Eventually, I got to a point where I started using it to
make frozen candies,
caramel dip for fruit, and then just eating them plain with a big dollop of
peanut butter.

I
make these bars using a shortbread crust that I've used in other recipes such as my Chocolate «
Peanut Butter» Cookie Bars and Holiday Raspberry
Caramel Tart.
Even if you were just
making the brownies by themselves, without all the bells and whistles (Snickers,
peanut butter,
caramel... ya know, the fancy, schmancy stuff) you would never go back to boxed brownie mixes again.
Instead of egg and pasta salads, and
peanut butter and jelly sandwiches for the kids, tables were stocked with SunButter (
peanut butter substitute
made from sunflower seeds),
Caramel and Apple Bars, and soft Snickerdoodle Cookies (dairy, gluten, wheat, nuts, tree nuts, soy, egg, fish and shellfish free).
:) Of course I forgot to take pictures (I am so bad about that), but we had lots of delicious fall - colored and fall - flavored foods: I
made spicy chicken dip, carrots and dip,
caramel - snicker - apple salad, and apple cider, and the other couples brought gingersnaps and pumpkin dip, gooey pumpkin cake, and
peanut -
butter pumpkin bread.
My mother - in - law
makes everything for T - day so I am baking - a
caramel pecan pie, pumpkin bars, pumpkin pie, pumpkin bread, cranberry orange bread, and to top it off... two recipes from RR latest mag - pretzel nuggets wrapped in
caramel and dipped in chocolate (I'm using
peanut butter filled pretzel nuggets and also sticky toffy pudding.
