made this twice, and the first time accidentally used tomato sauce in place of the tomato paste, and it actually turned out a little better

because it just looked too good!
That's right, instead of just having to go without French
toast because of the no grains rule on the Paleo diet, you just
make the bread grain - free and you're all set.
I added some ground flax seeds and
toasted millet (which I bought specifically to
make your crackly banana bread recipe) and skipped the coconut
because my husband is ridiculous.

I
made it specifically
because I love
making French
Toast with apples and cinnamon and I was determined to start with my own bread.
It's an overnight French
Toast Casserole which is awesome
because you can
make it the night before company comes and then all you have to do is pop it in the oven in the morning.
Now
because I'm a huge fan of coconut (I think this is pretty well known by my regular readers) and coconut WITH pumpkin pie
makes sense to me, I added some shredded coconut in the mix and then topped the bars with
toasted coconut!
First, I
toast the nuts lightly on a sheet pan to bring out the oils,
because there's nothing like the smell it
makes as it browns.
I did
make a few modifications to suit the amount of time I had and what I had on hand (I used jarred roasted red peppers instead of roasting my own (there were about 3 large peppers in the jar), I
toasted the walnuts lightly in a dry skillet before putting them in the food processor, I used honey instead of pomegranate molasses
because I couldn't find the latter, and I used 2 tbsp dried parsley instead of 1/4 cup fresh).
I'm going to
make this again with adjustments
because this style of stewing beans topped with
toasted, herbed bread crumbs is outstanding in theory.
I really like the idea of just having to bake it in the morning — and having it all done at once (A couple of days ago I was
making a standard type of French
toast, cooking the slices individually, and ended up burning it somewhat
because I had to take a phone call.
