My grandmother would
make this kind of
rice all the time, with whatever
vegetables she happened to have: with peppers and tomatoes in summer or with lots of onions, carrots and canned mushrooms in winter.
Grilled
vegetables and sausages over
rice with spicy peanut sauce has quickly become one of my favorite recipes to
make in the summer.
Serve it over whatever
makes you happiest (white
rice, cauliflower
rice, mashed potatoes, a baked potato, or even some cooked
vegetables) and then garnish with your favorite toppings.
