made my wild mushroom soup with no butter, using oats instead to thicken it.
The book arrived Friday morning, and I've already
made the wild mushroom tart, the fingerling potato salad, and the spaghetti squash tacos.
I have used this recipe without fail so many times now - have altered it and
made a wild mushroom and truffle oil risotto (just omitted the peas and onions)- and also for a wonderful butternut squash risotto - baked the squash first - then cut into small squares - used cumin as the flavouring agent.

Though these dishes are tasty — it's hard to object to Prosciutto Tostadas with Shrimp and Parsley or a warm, pleasing
Wild Mushroom Soup — it's the sugary - sweet and fun - to - bake Texas - style desserts that
make this rather sweet, and rather expensive, cookbook worth the splurge.
Of course you can adapt this all kinds of ways, replace the heavy cream for chicken stock to
make a lighter version of this stuffing, swap out the butternut squash for
mushrooms, add nuts for crunch and flavor, use cornbread instead of the rustic bread featured in the recipe here, add in some
wild rice.
Lots of leftover BBQ (meat, portabella
mushrooms, corn, etc.), chickpea
wild rice salad, potato salad and cake... so I
made salads out of them.
Most likely originated from Sicily, where Marsala wine is
made, this dish has a creamy sauce that's got a hint of sweetness from the marsala, a smoky - richness from the bacon, and lots of umami - goodness from the
wild mushrooms.
I'd
made this

wild rice casserole many times in the past and it's exactly the kind of food I want to eat on a cold winter day.
