Over the weekend I did
make a zucchini lasagna, loosely based off of Skinny Tastes.

I
made the
lasagna with
zucchini rather than pasta (mistake) because I had like five in the fridge.
I have yet to
make lasagna / enchiladas with
zucchini and I absolutely love the idea... it keeps the meal so fresh and light, and yet that filling is so satisfying!
I've
made lasagna with
zucchini before and found it too be soupy also!
While brainstorming ways to
make a summery
lasagna with the same flavors as the classic casserole, Matheny chose to replace
lasagna noodles with
zucchini, and use high - protein quinoa instead of a meat filling.

I was thinking of
making my skinny
lasagna rolls or my gluten - free
zucchini lasagna because I was feeling like eating a comfort food.
I
made this
lasagna style... I only had one
zucchini so I only
made a bottom layer of «noodles».
I
made a
lasagna using
zucchini instead of the noodles but for some reason the whole
lasagna became very watery.

Then I remembered how much I enjoyed this
zucchini lasagna recipe, and I thought it might be fun to kind of experiment and
make this more of a low carb
lasagna soup recipe.
