The Louisiana hot sauces are
made out of
tabasco or cayenne chiles, while the Caribbean sauces usually contain the various pod types of the Capsicum chinense species — commonly called «habaneros.»
I also had no idea that
Tabasco was
made all right there on Avery Island.
MAKES 4 - 6 tacos INGREDIENTS for the tangy cashew cream: 1/2 cup of cashews, soaked for a min of 2 hours 1/4 cup of water 1 tablespoon of white wine vinegar 3 green onions, white parts only (green parts reserve for garnish) 1/2 teaspoon of kosher salt 1 head of broccoli, chopped into florets 1/2 cup of garbanzo bean flour 1/2 cup of water 1 teaspoon of garlic powder 1/2 teaspoon of kosher salt 1 teaspoon + of
TABASCO chipotle, original red, or reserve about 1/3 cup of sunflower oil (or another neutral high - heat oil) for the tacos: 4 - 6 tortillas OR 8 - 12 bibb lettuce leaves 1 avocado, sliced some thinly sliced red chilies (optional) a few dashes of
TABASCO (of your choice, optional) a handful of cilantro, chopped the green part of the green onion, reserved from the cashew cream METHOD
Make the cashew cream:
I think just a little less chilli (not for me) I used lamb, cooked quickly and
made a fresh salsa (red onion, red chilli, tomatoes, with lime and coriander), guacamole, cheese and
tabasco on a soft flour tortilla.
Note — I use enough Chipotle
Tabasco to
make the chowder look very light pink... It should have a little kick — You'll have to taste it often to get it seasoned to your liking....
I
make a North Carolina bbq sandich, that has no bbq sauce at all — its cooked in slow cooker with vinegar, crushed red pepper flakes, and
TABASCO.
The only adjustments I
made were using black beans since they were in the pantry and I added
tabasco to the mix for added kick and moisture!
Panera Bread also
makes their soup with just a bit of heat, so we'll add a little
Tabasco pepper sauce to the pot to wake everything up.
I use both adobo sauce from a can of chipotle as well as a hefty amount of
TABASCO Chipotle Pepper Sauce; I've found that the combination
makes for one heck of a tasty soup!
