So I went out to get all the ingredients to
make this, and when I got home I realized I forgot to buy
lemongrass!!!! Total bummer.
I used one small butternut squash, half a can of coconut milk, one onion and one
lemongrass stalk which
made a lovely thick sauce — 2 portions.
It was amazingly easy and cheap to
make (I had most of the spices on hand so just needed to buy aubergine and
lemongrass).

make a sofrito by sauteeing on medium high heat, in 5 tblsp olive oil, 1 medium onion, 4 garlic cloves, & 8 to 10 Cachucha peppers (a caribeean cousin of Habenero, citrus flavor without the heat — I've never found and use 2 - 4 Poblanos or Anaheims intead — Jaffrey suggests simmering some
lemongrass with beans to replace citrus notes — I add lime juice at end) all finely diced.
If you try
making it, I would highly recommend sourcing all of the proper ingredients — I think the
lemongrass, galangal and kaffir lime leaves are all needed to give this dish it's distinctive and delicious flavor.

I just
made this tonight, and it turned out great though I wasn't able to do the recipe word for word — couldnt add the anise or
lemongrass (budget is tight) and I also only have a 1qt soup pan, so what i did was just boil the tomatoes and the vegetable broth and corn startch, saute the onion and red pepper, then when they were all hot threw the rest in my crock pot for about 4 hours... and it turned out great!
The recipe involved
making a herbal decoction first - a combination of
lemongrass, ginger and mint.

Lemongrass and veggie broth sounds great — I'm going to
make some this week as I am
making a big pot of vegetable broth today.
To try out my new blender, I decided to
make a basic butternut squash soup and change it up with some
lemongrass, Indian seasonings, and coconut cream instead of heavy cream.
To
make a Southeast Asian version, add a crushed
lemongrass stalk to the broth, and use fish sauce in of soy sauce; leave out the sesame oil.
