I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed) beans (2 kidney, 1 each of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for

in Texas, we got a nice reprieve today with some cloudy weather - it was time to

chili!
I guess the only good thing about living
in a place where it's chilly is that I can

chili without feeling all weird haha.
In any event, I will be
making this again, keeping with the sweet

This dip is great when I

chili powder for extra flavor and broil it

in a tupperware container)-- veggies — corn on the cob, fresh green beans, carrots, etc. — bagged salad with toppings and dressing (* cooler needed)
For an easy way to
make your own crispy tofu at home, simply do the following: (1) press a 14 or 16 ounce block of extra firm tofu for at least 30 minutes to remove excess water (lay tofu on a cutting board, top with lots of paper towels, and then top with a heavy book or pot); (2) chop the tofu into cubes; (3) toss tofu with 1 1/2 tablespoons of coconut aminos (or soy sauce or tamari) along with 1 tablespoon melted coconut oil and red
chili flakes; (4) add
in 1 1/2 tablespoons cornstarch and toss to coat; (5) spread tofu cubes out on a parchment paper - lined baking tray; (5) Bake at 400 degrees Farenheit for 25 minutes until crispy and golden on the outside, tossing halfway through cooking time.
