I bet these were yummy — I
made something similar (we called them healthy bounty bars) once — mix of dates, cashew nuts,
coconut and
chocolate chips) and I think they were what powered me, my boyfriend and my sister on a gruelling hike in Sardinia in 40 degree weather.
Then when you're ready to
make your frosting, you only use the fat from the
coconut milk, melt it together with a bag of
chocolate chips (I used dairy free ones), add a little vanilla and salt to taste and stick it in the fridge to re-solidify until ready to use.

However, my all - time favourite
chocolate chip cookie recipe is loaded with nuts, oats,
coconut and enough butter to
make them nearly tuile thin.
Behold the ultimate

made predominately from
coconuts, cashews, almonds and dates.
I recently just bought
coconut flour to
make your
chocolate chip banana bread (which was AMAZING).
I've
made these large marges, your whole wheat honey bread, ginger
chocolate chip cookies, and
coconut oil brown sugar cookies, and I have yet to have anything but rave reviews!
You can add
coconut, peanut butter, or more
chocolate chips and
make your own flavor combos as well.
