So I took the idea and did my own healthy spin on the dish,
making an enchilada sauce from scratch, skipping the cheese and topping it with this oven roasted salsa.

You can

Years ago I took a cooking class where I learned how to

If you want to
make it mild, just use diced green chiles instead of jalapeños, and be sure to use mild
enchilada sauce.
