lettuce leaves 1 avocado, sliced some thinly sliced red chilies (optional) a few dashes of TABASCO (of your choice, optional) a handful of cilantro, chopped the green part of the green onion, reserved from the cashew cream METHOD

You could easily throw this shrimp in a corn tortilla and call it a
taco, over some
lettuce and
make a delicious salad, but I've decided to go the
lettuce wrap route.
Sometimes I'll
make my
taco salad into more of a burrito bowl with a tortilla on the bottom, the shredded chicken, some cilantro - lime rice, and then the
lettuce and vegetables.
I had it in
lettuce wraps tonight, going to

I hope my kids will fondly look back on Tuesday night dinner, and remember that sometimes we ate crispy pan-fried beef and bean
tacos, other times it was fish
tacos, and then there were the nights I
made a lightened - up version served in
lettuce cups.
You could most certainly
make tacos out of this like I did with my Spicy Cocoa Rubbed Roast leftovers or just hit the

When put with my wife's
taco dip (basically cream cheese mixed with home -
made taco seasoning (Alton browns
Taco seasoning # 19) with a bit of
lettuce and tomatoes on top) it was hard to tell where the subtle crunch of the
lettuce left off, and the chip crunch began (WOW)... They were a little lacking in flavor (which is actually an advantage if you want to add flavorings), but otherwise very good (can u say Doritos dust?)
Once ready (you'll know, as the shrimp will be pink and opaque throughout), take the shrimp off the skewers and
make your
tacos:
lettuce, then shrimp, salsa, then cabbage (or our creamy coleslaw if you're feeling like an overachiever... it is worth it... mmmm) and I like to drizzle a little coconut milk over it, to cool the spicy a little (IF I don't
make the coleslaw, that is).
Lean
taco meat can be added to a bed of
lettuce, sprinkled with low - fat cheese and topped with fat - free sour cream and salsa to
make a delicious meal suitable for lunch or dinner.
