make meat stock, use meaty,
bone - in cuts of meat like whole chickens (read how to
make a poached chicken for meat stock here), chicken thighs, drumsticks, and wings, whole wild - caught fish, and steaks or
roasts.
All I really wanted to
make was chicken stock, but this recipe from Kitchn called for the
bones from a
roast chicken, so I thought I might as well do that first.
I've seen those
bone - in

bone broth soup to my list of fowl (not foul) accomplishments.
I followed the recipe exactly, except I used dried thyme and parsley, and homemade chicken broth (
made by using the leftover
bones of a previously eaten
roasted chicken, left to simmer in a crockpot with some onion and carrot peels for 10 hours overnight).
I wish I had the time (and the inclination) to
make a tomato aspic the really old - fashioned way using lovely beef
bones that are
roasted and then slow cooked to
make a gorgeous, delicious gelee.
Of course, if you don't have
bones from a rib
roast, you can
make beef broth with whatever
bones you can get your hands on.
I usually
make my own from the leftover
bones of my Certified Angus Beef ® brand rib
roasts.

A light stock is
made of
bones that have not been

roasted root vegetables and a simple salad one night; the leftover meat can be shredded into a lunchtime salad the next day; and the

made into a delicious and rich stock.
Making a roulade like this means more stuffing in each, but if you'd like to get
bone - in pork chops you can cut a slit in the middle of each one and stuff the filling into the pocket (the
roasting time will be longer however).
When slow
roasting, the fat will melt and soak the meat,
making it extra tender and giving it that fall - off - the -
bone experience.
The only change I
made, was to
roast my own chicken legs rather than cold picked over rotisserie, left the
bones in, put lots baby mixed greens on top ----- putting the greens on top of the hot from the oven chicken slightly wilted them and allowed the great vinaigrette to absorb into both the greens and the hot fingerlings.
