Roasted pumpkin seeds are a tasty and healthy snack that are so easy to
make.
This is one of my favourite recipes to date and I will never go back to
making those regular
roasted pumpkin seeds again!
So when you're scooping out the
seeds to
make your next
pumpkin recipe... don't throw them away,
roast them instead!
Roasted pumpkin seeds are simple to
make and have a satisfying crunch.
We
made dinner with a little sugar
pumpkin last night and so I decided to soak the
seeds overnight in the fridge and
roast them this morning.
If you don't have time to
make pumpkin recipes, just
make sure the
pumpkin products you are buying at the store are free of preservatives, artificial flavors and chemicals (try organic
pumpkin puree,
pumpkin ice cream, maple
pumpkin KIND bars, organic
roasted pumpkin seeds,
pumpkin granola, etc.).
Just cut a sugar
pumpkin (best for
making puree) in half, scoop out the
seeds and
roast, cut side down, on a greased baking sheet for about 45 - 55 minutes in a 375F oven.
Pumpkin loses quite a bit of weight once the peel and
seeds are removed so that may have been the issue, I usually start with double what I need then just
roast or steam any extra for dinner Thanks for popping back over, I love to hear when recipes

Pumpkin Seeds can be used to
make granola, pestos, tossed onto salads, added to granola bar recipes, or
roasted on their own for a crunchy on the go snack.
I opted for
roasting since I also wanted to use the
seeds inside to

pumpkin memory is when I was a little tyke my aunt helping me grow my first
pumpkin or two, then
making pie and
roasting the
seeds!
These Honey
Roasted Pumpkin Seeds are simple to
make.
The only thing I'd say is I didn't like the
pumpkin seeds in the bars — I had used some that I
roasted from Halloween — it
made them a little chewy.

made from Saint Lucian chocolate, a banana beignet a la crème, and homemade avocado ice cream with local almonds, pistachios, pecans and
pumpkin seeds that had been
roasted with a Saint Lucian honey.
I loved
making all these different flavors of
roasted pumpkin seeds (and eating them, too!).
To
make pumpkin puree, cut the
pumpkin top off, scoop out all the
seeds, slice the
pumpkin into four pieces, then
roast the
pumpkin in the oven for 45 minutes.
You want to
roast pumpkin seeds at a low temp to
make sure they get nice and crunchy without burning.
