made these for Canadian Thanksgiving back
in October (along with this pumpkin roulade) because I wanted
something like pie but I couldn't manage rolling out a pie crust with my busted elbows (which have both now healed and I'm back to full force

Days have been cold here lately — which is

something else taken and fried.
And so while
making the standard egg salad I usually prepare a day
in advance so I won't be running around the
kitchen all frazzled looking for
something to eat (trust me, it doesn't take much to frazzle the heck out of me) I thought: not today.
I will eat meals alone when I have busy days, am crunched for time, or am craving
