This fall my family was gathered around my mother, whom we were caring for in her final days... we took time to celebrate a birthday with a special kind of carrot
cake... we used the leftover carrots / apples / celery and who knows what else from the morning's juice (my dad's a bit of a health nut) and turned it into an amazing
cake, complemented by walnuts, pineapple and, of course, decadent
cream cheese frosting, covered with fresh toasted
coconut... it was so moist and delicious... the
making of it a wonderful memory and the eating of it sublime.

made coconut whipped
cream (just chilled canned
coconut milk whipped with some maple syrup) and topped the brownie with the
cream and strawberries...
made it more of a
cake than a brownie.
I next - to - never
make cakes with melted butter — it's either
creamed with the sugar, or I turn to my trusty
coconut oil.

I have been
making this
cake for years, with a twist, I take a small can of crushed pineapple and add the liquid from it to the
cream of
coconut and sweetened condensed milk, before I pour it on the
cake and put the crushed pineapple on top of the
cake, before I chill it overnight.
I have
made this for years but i don't use the condenseed sweetened milk I just poor the
cream of
coconut over the
cake in the holes.

To top this
cake I added a dollop of fat free plant based Greek yogurt because I wanted something quick and easy from the fridge and couldn't be bothered with
making whipped
coconut cream.
Made the cashew
coconut cream frosting and I used a little extra honey and whipped it up in our magic bullet it turned out pretty good, then I frosted the
cake with it and sprinkled shredded
coconut over the frosting and put the
cake in fridge It was a wonderful frosting thanks for sharing it.
To top it all off, this
cake is complete with a fluffy, sweet cinnamon frosting
made from
coconut cream.
The
cake portion i
make with grated cassava, more
coconut cream and sugar.
My grandmother always
made a sour
cream coconut cake which was amazing.

You'll get the sweet and slightly tangy burst of strawberry, the
coconut whipped
cream is mild and tropical with a hint of vanilla, and the Corn Flakes are similar to what you'd get if you
made a light cornbread short
cake.
Also, next time I
make the glaze, I'm not going to melt the
coconut cream completely, since the result was too liquid and soaked into the
cake (this didn't cause the center of the
cake to be under done.)
