The only change I would
make next time is to skip the
veggie broth (my version reflects this) as the chicken thighs produce plenty of juices for the
dish while they cook.
We eat it anytime of year, but I think it
makes a gorgeous autumn
dish with all its rich colours and flavours: the warm comfort of the
Veggie Chili, combined with fresh salad and zesty guacamole.
One of my favourite
