make and is one of my favourite fall combinations: Pumpkin + pomegranate + toasted pecans + avocado all sitting on a bed of kale, and topped with a sprinkling of seeds,
warm tempeh and a tangy balsamic vinaigrette.
To play off of that classic preparation, I burnt some meyer lemons to bring out their sweetness, and
made them into a vinaigrette to drizzle over this
warm, springy
salad.
We eat it anytime of year, but I think it
makes a gorgeous autumn dish with all its rich colours and flavours: the
warm comfort of the Veggie Chili, combined with fresh
salad and zesty guacamole.
But for those of us who really feel our best when some raw veg
makes it's way down our gullet, I offer the following suggestions: Add a
warm, cooked vegetable to your raw veg
salad.
And patios and
warm weather are
made for healthy food like
salads and fish... no need for
warm soups or pastas baked with a blanket of cheese right now.
Because I cook my rice just before I

salad, the rice is still
warm so I mix in the optional tablespoon of butter for an extra helping of good fats.

making it a great option for summertime picnics.
