I milk my own Jersey, eat my own eggs and meat beef, chicken goat; grow many of my own veggies year round, eat lots of cream and butter, the fat on my meat, bone broth; within the last year have given up vegetable oils except olive; gluten free for 2 years; very little organic cane sugar say less than 2 - 3 T. daily, many days none; wine and cheese of my own
making, mostly my own and daily; milk and / or
water kefir daily; work
at home is my exercise along with stretching; 90 % organix in everything.
But if the whey (the «
water»
at the bottom) is bitter or extra sour, then you may not be able to save it (by the way, this can sometimes be strained and used to
make soft or even hard
kefir cheese (so don't toss it just because it looks unappetizing.)
And, despite returning to more refined flours and sugary foods, I did continue to
make and enjoy probiotic kombucha tea, milk and
water kefir drinks that I enjoyed
at least once per week.
Start with simple steps by repopulating your gut flora with super drinks like
kefir and beet kvas, eat fermented vegetables daily, liberally consume bone broths (properly prepared — see Nourishing Traditions book by Sally Fallon and Mary Enig), eat grains that are only properly prepared (soaked for
at least 12 hours in salty and slightly acidic
water),
make sure your diet consists of foods rich in vit.
The simplest way to
make kefir soda is to use approximately one Alcoholic fermentation is the conversion of quart of mineral - rich
water, such as spring
water (a quart canning jar size with about an inch left
at the top), 4 to 6 tablespoons of grains and 3 to 4 tablespoons sugar.
Some specialty stores are even starting to sell another fermented drink,
water kefir, which is extremely easy and cheap to
make at home and has a quick turn over time.
Fermented foods are a must as well — home -
made cultured veggies and juices, kombucha,
water kefir, beet kvass (you can also buy these
at the health food store if you don't want to or can't
make them — Zukay and Bubbies are good brands).

make at home as well as non dairy
kefir (
water kefir grains).

make at home using organic, raw, grass - fed milk, or coconut
water, and will contain far more probiotics than you can get in supplement form.

water kefir will work with coconut
water but never used the «so delicious» coconut milk with milk
kefir... just
make sure that you have grown your new
kefir grains in fresh milk for
at least six weeks so that they have a good micro flora balance when they are transfered to a new medium to grow in.
I want healthy
water for all of us, plus would like to
make water kefir, kombucha and fermented veggies
at home!

If you notice a preference for ONLY bready foods or sweets — or if there are many objections to smells and texture — you may want to start adding coconut
water kefir (you can pick it up
at Whole Foods or
make your own) to a favorite juice.
Chris, I
make a smoothie with raw milk
kefir blended with my oat / wheat porridge that I
make (sprouted dehyrdated mix that I mill
at home, then soak in
water with some
kefir for 2 days before cooking on low heat).
For some people with sugar issues,
making their own coconut
water kefir at home is the only healthful fermented beverage option.
