I didn't want an overwhelming
sweet potato flavor which is why I cut the
mashed potatoes with half yukon gold.
All this recipes requires is roasting whole
sweet potatoes in the oven until tender,
mashing their innards with a little sour cream (optional, but it really gives them a great creamy
flavor - some butter or coconut oil could take its place) and spice (again, optional, but some cinnamon and nutmeg is awesome here).
Mash up a couple avocados with some salt, pepper, lime juice and a few tablespoons of homemade salsa (recipe below), then top each
sweet potato round with a dollop of guacamole and add a cilantro leaf for both
flavor and presentation (total win!).
