Once you know what ingredients you're working with, it's easier to
plan meals for the week ahead (and not accidentally double - buy at the store).
As a college student myself, a giant pot of soup sounds good BUT eating the
same meal for a week definitely doesn't.
We eat vegetarian meals several days of the week in this house, but I made a point of selecting only
vegetarian meals for this week, and especially today.
If I go in with two to three healthy recipes planned I am much more likely to come out under budget and actually able to make some good
healthy meals for the week.
In terms of lunch, I finally got into the habit of prepping
meals for the week on Sunday, which saves some money by not eating $ 12 salads every day.
You'll also want to take the time to prepare
meals for the week so you have a nutritious breakfast to start your morning, a healthy lunch to get you through the workday, and a satisfying dinner to round out the day.
In the Fall, I'll often plan our family's
meals for the week around a large winter squash since one large squash (like a cushaw) since it can be a side dish on its own, a base for soups, pureed in smoothies and even the seeds can be roasted for a snack!
I did all our laundry yesterday,
prepared meals for the week, took the dogs on a few great walks (you guys - 95 degrees & humid, but we do it!)
Instead of shoving the leftovers into the fridge and hoping that inspiration will strike, I'm intentional with what I want to do with them, which also takes the guesswork out of a few
more meals for the week.

Our two
