In terms of lunch, I finally got into the habit of prepping
meals for the week on Sunday, which saves some money by not eating $ 12 salads every day.
I am usually good about prepping
meals for the week on Sundays — I actually enjoy it!
Cooking dinner on weeknights can be a rushed, tiresome ordeal whereas making
meals for the week on a Sunday afternoon can take on an almost zen - like quality.
I have been reading a lot lately about people preparing
their meals for the week on Sunday and it makes it much more convenient to eat throughout the week.

week.

I have been
meal prepping
on Sundays
for 2 - 3 dinners a
week and this was a really easy way to prep a
meal that my boyfriend was able to dump right in to the crockpot today while I was at work I came home and served it with microwave brown rice and some fresh steamed green beans that I seasoned with lime and cilantro.
Instead, I'll cook as much as I can
on Sunday and store the rest
for quick and easy
meals during the
week.
Stocking up
on pantry staple items in larger quantities (particularly if you find a good deal) allows you to simply buy the main, fresh ingredients
for your
meals each
week.
But the greatest bonus is I always know I have a healthy
meal option
on hand
for any busy night of the
week that I may not get time to cook something new.
I have been gorging
on this
meal for the entire
week.
I was just
meal planning
for next

on the list!
For obvious reasons, I can't dish
on all the
meals I've been creating, but last
week I put one together specifically with you in mind.
Sometimes I get crazy with my avocado toast if I've done some

on hand (pesto, roasted chickpeas and sweet potato hummus are my fave toppings).

I DO appreciate the memory of a special
meal of about 20 different items served
on a bright green banana leaf
for the festival of Onam in Bangalore last
week.
During the school year, I make a big pot / crockpot of soup every Saturday,
for lunch
on Sunday, and
for lunches and quick
meals for the following
week.
And let me tell you, it will be nice to go to some 80 degree weather and get away from the single digits here in Kansas City recently!But... is it just me, or does anyone else start planning their
meals for the
week following a long trip before even going
on the trip?
If I prepare a delicious
meal on Sunday, it can be «reinvented» into a new delicious
meal for the
week.
