In Japanese, soba
means buckwheat, so soba noodles are made with
buckwheat flour.
First things first:
Buckwheat isn't actually a wheat at all, which
means that, unlike spelt and rye, the
flour it creates is gluten - free.
These cookies are
meant to be soft, but try adding a bit of
buckwheat flour — that should make them less sticky:)

flours.
It uses
buckwheat and tapioca
flour, which are both gluten free, which
means you won't feel bloated afterwards!
