I've been at this three months
and find that breakfast needs to be my
easiest prep
meal, which
means a
quick avocado, almonds or walnuts,, piece of cheese, hard boiled egg, or some combination thereof, maybe with an apple.
I tend to make a large batch every week to store in the fridge for salads, which
means that if I plan ahead
and make a few extra, this egg curry becomes a very
quick and easy weeknight
meal.
