I've really only used the upright water smoker because the ham has always fit fine on the grate (and I didn't need the larger grill space of the horizontal smoker) and it seems to
keep meat a bit more moist than the horizontal one does.
When you go to carve the rested bird, slice the
dark meat a bit thinner than the white; it's gamier than what you might be used to.

Last year I did a traditional brine, which is great but leaves

An overnight soak in buttermilk will be good for getting rid of some of the gamey taste and it will help to tenderize
the meat a bit.
But a childhood favorite is sopita de nopales and I switch out
the meat bits with tofu.
The fat will liquefy, and
the meat bits will be left behind — usually taking overnight to a full day to get it done.
You could also add grated or pureed vegetables, egg or even mashed beans or lentils to boost the nutrition and stretch
your meat a bit.
The description does have vague references to this food being focused on hydration but I feel like calling it «chicken and turkey in gravy» is misleading as it is more like «chicken gravy with
meat bits».
