Q. Dr. BBQ: I was watching my friend cook BBQ flank steaks and he put the done
meat back on the grill right before serving to «
juice em up.»
Add the
meat, along with any accumulated
juices,
back to the pan and reduce to a simmer.
Usually it looks something like this: eliminate sugar, dairy, wheat,
meat, caffeine, and alcohol steadily over three days; eliminate nuts, seeds, and nightshade plants (tomatoes, potatoes and eggplants) over two days; eat whole grains and steamed vegetables for one to two days; drink fresh
juices and broths for two to three days (with one day devoted to lemon - maple - cayenne tea); and steadily climb
back out.
The fat is the ideal medium for re-crisping the sliced
meat in a skillet (and for painting onto a pineapple before roasting it), and the
juices can be added to the crisped
meat to add some flavor and extra moisture
back to the mix.
Once melted, remove promptly, place on a platter & tent with foil for about 5 - 6 minutes for the
juices to return
back into the
meat.
Check the temperature with a
meat thermometer to make sure the temperature is 165 degrees F. Take the turkey off the grill and let rest for five minutes to let the
juices rest
back into the
meat.
Add the
meat and any
juices that have accumulated on the plate
back to the pot.
The rub will melt and the spices are carried
back into the
meat by its own natural
juices while the surface remains moist enough to readily take in smoke flavor.
Board dressing: take all of those flavorful
juices that accumulate when the
meat rests off your cutting board and pour them
back over the
meat, where they belong.
If you poach or use a crock - pot (cook
meats in liquids) and then throw away the
juices, you are tossing out some nutrients as well so be sure to try and add those
back into the finished meal!
Put shredded chicken
back in the
juice in the pot and saute for 5 minutes (this boils off the water and adds more flavor to the
meat).
To transition
back to a regular diet I avoided
meat for three days and basically ate the foods I was
juicing and added in nuts, so basically I ate salads and fruit.
Remove any large fatty pieces and the bone (if using), shred the
meat, and mix it
back in with the cooking
juices.
I cook two meals a day — I serve up a breakfast burrito (eggs whipped and cooked to a Holladaise sauce consistency & then mixed with dry cat food & cut up turkey hot dogs) and a meaty oatmeal (chicken thighs cooked overnight in a crockpot with a little water, then the
meat separated off, the broth thinned down with water & used to make oatmeal, then add
back the chicken
meat & serve up warm so its nice & sloppy with a lot of
juice.
