set up for indirect grilling with a plate setter

lower rack to deflect the heat around
meat and slow down the cooking process to infuse that smoke flavor without drying out the
meat.

meat comes out really tender and usually only takes about 2 hours
on low - moderate heat
setting.
You can easily make your own dried
meat treats, either with a food dehydrator, or in the oven
on the
lowest setting.
