Shallots have a
milder flavor than a red onion with a hint
of garlic.
The combination
of oregano and
garlic imparts an Italian
flavor to this vinegar, which we keep on the
mild side so that the heat doesn't mask the
flavor of the
garlic.

of red onions which for me are too strong and can overwhelm the delicate Octupus
flavor, I chose shallots, they have a
