Cos lettuce has
a mild flavor so it's great to add to smoothies and juices.
But then I went for it with the cheese — Monterey Jack for to bring in the stretchy, gooey factor, but with
a mild flavor so that the boldness of the blue cheese really stands out against the spicy chicken mixture.
