I believe I am experiencing the Herx reaction as I have just started making my own raw
milk dairy kefir, kombucha and fermented vegetables.

Like regular
milk kefir, coconut
milk kefir is made by using
milk kefir grains to ferment the coconut
milk, but of course it is
dairy free.
So while
dairy milks (cow, goat, sheep) are going to provide the best substrate for proliferating
kefir grains, for those who avoid
dairy, we can also use them to ferment nut
milks!
Kefir grains have evolved with
dairy milks.
To help maintain the integrity of the
kefir grains over time, rest them in
dairy milk for at least 24 hours every other batch or two.
We found that it took around 7 weeks of regular fermentation in
dairy milk to fully recover
milk kefir grains so that they would reproduce after having been used to ferment coconut
milk for 2 weeks.
Because I avoid
dairy, I rotate my
kefir grains between whole
milk (their favorite) and coconut
milk (what I like to drink).

If you follow a paleo friendly ketogenic diet plan and avoid all
dairy, you can still enjoy the health benefits of probiotics and enzymes by making
kefir from coconut
milk.
FYI, you can also use an organic probiotic bill to and put it into the cashew cream / nut cream / or nut free hemp (any) seed cream... to to turn it into yogurt / if you can't buy real
Kefir Bacteria (Lactobacilli bacteria)- Its not
dairy but is used to make
milk into
Kefir and after its used to turn
milks into yogurt, you can strain out the original chunks of bacteria (which is what we do here in Greece and then put the
Kefir in the freezer so you can perpetually re-use it — while waiting for yogurt to become cheese.
I've personally found
dairy kefir to feel slightly acidic and inflammatory for me so I prefer to make almond

Fit in some raw animal protein and fats (from high quality sources), preferably daily, such as raw
dairy foods (
milk, cream,
kefir, unheated yogurts, ice cream), raw fish (ideally fermented), and raw muscle or organ meats (such as steak tartare, freezing meat for at least two weeks before consumption to eliminate parasite risk), and egg yolks (see side bar What's the Story with Raw Eggs?).
As an alternative to coconut
milk, you can use organic yogurt or
kefir if your stomach tolerates
dairy.
