In resonse to «substitution for bananas» — I think you could
mix date puree and applesauce and probably replicate the moistness that bananas provide.

When the
dates are soft place them (including the melted coconut oil, grated ginger and apple
puree) into a blender with the raw cacao powder and blend until the
mix is totally smooth.
Place the
date puree in a large
mixing bowl along with the mashed bananas, cashew butter, eggs, stevia, and vanilla and
mix until smooth.

In a large bowl,
mix the chickpea
puree,
date paste, pumpkin
puree, buckwheat flour and pumpkin pie spice and stir until totally combined.
That gets
mixed with
date paste and pumpkin
puree for a super gooey, fudge - like texture, and plenty of sweetness and moisture from the
dates and pumpkin.
In a large bowl,
mix the chickpea
puree,
date paste, banana flour and cinnamon until totally combined (you can also add some nuts at this point, if you're into that!)
Add the almond milk, flax egg and
pureed dates and give it a good stir until all ingredients are well
