@Anonymous: I tried with both of my stand
mixer and
bread maker, and found that
bread maker performed much better than stand
mixer in kneading this tangzhong dough.
In a
bread maker, stand
mixer, or other kneading apparatus (maybe a big ol' bowl if you're going to be kneading with your hands) add the water, sugar, salt and yeast.
Throw it
in a
bread maker or
mix it up, and it is definitely the best I've tried!!!
I have been making a lot of my own
bread lately I cheat a bit though and use my
bread maker for the
mixing and rising and then finish it
in the oven.
I put the ingredients
in my
bread maker in the order listed and then set my
bread machine to just
mix / raise the dough and take the dough out before it bakes the
bread.
