For my Pure Fuel post today I decided to make a trail
mix with a mixture of nuts, ancient grain cereal,
dried fruit, coconut flakes, and dark chocolate covered espresso
beans!
LOL If I took out everything I can't eat in trail
mix, I'd have
dried blueberries and chocolate covered coffee
beans.
Once veggies are cooked, allow to cool 5 - 10 minutes, then divide spinach and
mixed greens between two plates or large bowls, layer with sweet potatoes, brussels sprouts, garbanzo
beans,
dried cranberries, and goat cheese.
I love this protein powder, I have tried many vegan protein powders and they either taste awful, they don't
mix well (it is important to
mix this powder with your liquids BEFORE you add the
dry stuff or it will get clumpy) or have sunflower lectin, soy or gluten after I found out that I am allergic to dairy, soy, gluten, sunflower seeds, green
beans, yeast and basically everything good and this is by far and wide the best.
Directions for confit: While
beans are cooking finely chop 1 or 2 medium onions and 6 cloves of garlic / Saute quietly in 3 T olive oil for about 8 minutes, stirring often — don't let them brown / Add 2 C chicken or vegetable stock and simmer together with 1 T finely chopped rosemary and 1 — 1 1/2 T winter or summer savory (I had to use
dried) until stock is reduced to just below the onion mixture / Still no salt / Mixture will be a little like «marmalade» in terms of thickness / The reduction will take anywhere from 30 -40 minutes, about the same time required to cook the
beans / When both are done
mix together with salt (start w / 1 teaspoon) and pepper to taste / Cook together for another 10 minutes / Good stuff.

In a large bowl, combine the
bean paste, sauteed onion, all the
dried fruit, nuts, 2/3 of the wild rice (reserve 1/3 for top), and 1/2 of the flax seed mixture, gluten - free breadcrumbs, spices, salt and pepper plus fresh oregano —
mix well.
Vanilla, Berry, and Bourbon:
Mix 1 teaspoon vanilla
bean paste in with the buttermilk before adding it to the
dry ingredients, add 1 teaspoon to the filling, and use bourbon in place of the lemon.
I cook 1 and a 1/2 cups (
dry) in 6 cups of water for 30 minutes on medium high heat, drain, and then add 1/2 a jar of Trader Joe's Bruschetta
