The results are a
mix of retro flavors, such as Nacho Cheesy
Sauce and a lighter Cream of
Mushroom Soup, and fresh, veggie - forward dishes like Mediterranean Stuffed Cabbage Rolls and Summer Corn Custard.
When I grew up, spaghetti
sauce was ground beef, canned tomatoes, Italian seasoning
mix, onions,
mushrooms (my mom used canned
mushrooms which I find revolting) and only a hint of garlic since my dad has a deluded idea that garlic gives him heartburn.
Make the
mushroom stock (I used a Knorr stock cube) and
mix in the reserved pan juices, soy
sauce, Worcestershire
sauce, cornflour and English mustard.
The
mushroom bolognese was full of flavour with a rich tomato
sauce and I what I love the most about it is that some carrot noodles were
mixed with the wheat tagliatelle which is such a clever way to sneak in extra veggies into your meal.
Pour in the soy
sauce, mirin, swiss chard leaves,
mushrooms and sesame seeds; give it a good
mix and cook for an additional minute or two until the vegetables have softened.

I'm not including a recipe for tomato
sauce nor am I getting creative with pizza toppings — I like bacon and
mushrooms with a
mix of cheddar and mozzarella cheese on my pizza.
Also, try wrapping some around a
mix of sauteed
mushrooms with soy / garlic / scallion / chive and then pan frying them, and drizzle some Worcestershire
sauce on top.
