I served it with polenta and a salad of rocket and
mixed lettuce with roasted sweet potatoes, crumbled feta and toasted pine nuts and pepitas.
While I can't totally relate as I LOVE salad, there is a better way that
mixing some lettuce with carrots, cucumber and tossing with a store - bought gelatinous dressing.

It is made from a
mix of baby kale, romaine, and spring
lettuce topped
with grape tomatoes, dried cranberries, sliced apples, and served
with crispy or grilled chicken and a breadstick.
Once soft place a
lettuce leaf in the middle, drizzle a teaspoon of the mango
mix onto this then top
with a
mix of the vegetable strips and sprinkle
with herbs.

with 6 cups of torn washed and dried
mixed lettuces (a store - bought mesclun mixture is great), and top
with some quartered ripe tomatoes and sliced cucumber.
I tossed it
with a mesclun
lettuce mix, too.
If the bread is already sliced than just add egg salad one side, top it
with any greens, arugula, baby spinach,
lettuce, spring
mixed greens, etc..
By packing one side of your bento box
with lettuce cups and the other side
with a filling mango and tempeh
mix, you'll have ready - to - build
lettuce wraps for during your lunch break.
