Once melted, add in chopped
onions with 1/4 teaspoon
of salt, and stir until all
onions are coated in the oil
mixture.
- Once the garlic becomes aromatic, sprinkle in the remaining 2 tablespoons
of flour (the tablespoons can be a bit «heaping») over the

When the
onions turn a golden brown, add your desired vegetables and stir well to stop the
mixture catching whilst you fry for another couple
of minutes.

The only change I would make to this dish is I would leave the English muffins whole and arrange the ham and green
onions on top
of them and pour the egg
mixture over and around them.
Spread the
