I would just crank up the heat a bit, and before frying them in the coconut oil, you could actually pat the mixture with a towel to get some of
the moisture out of the mixture.

Continue working the
mixture in the pot, until most
of the
moisture is boiled
out.
If the spinach and / or beet
mixture turned
out too moist for handling, simply add about 1/4 cup
of ground rolled oats to absorb the extra
moisture.
Scoop the squash
mixture into a clean kitchen towel and squeeze
out all the excess
moisture (this is the most important step
of the process, so don't skip it!).
