It is the process whereby atoms or
molecules in a liquid state (or solid state if the substance sublimes) gain sufficient energy to enter the gaseous state.

It works by «pumping» atoms or
molecules in a gas,
liquid, or solid into a more energetic
state, usually electrically, chemically, or with another laser.
When a
liquid freezes, the
molecules tend to settle
in the lowest - energy
state, and that almost always involves some form of symmetry.
The team report a
molecule called lysophosphatidic acid (LPA) changes cells from a solid - like to a
liquid - like
state, allowing cells to flow between normal tissues
in the body.
Sound travels
in air like waves
in the fluid
liquid water of the ocean, the sound will cause a
molecule to vibrate more energetically where it is, it then causes its neighbour to vibrate more energetically and itself will go back to ground
state, like a mexican wave the energy of the sound is passed along through the volume of air.
Or if the there enough water
molecule in droplet the water acts similar to a drop water from dripping facet or pool of water - which a portion of it is evaporating and condensing - but with H20 gas
molecules in a gas mixture most of gas
molecules are transiting from gas to
liquid state within a time frame of something like less than a second.
Molecules in liquid don't have such clean discrete
states but they do still interact more strongly at frequencies close to such vibrational
states.
Water is by far the most important greenhouse gas, and is the only
molecule that is present
in the atmosphere
in all three
states, gas,
liquid, and solid.
In doing so they take energy from their immediate surroundings and leave the liquid cooler (the energy is, as you rightly state, now in the form of latent heat; plus the liquid is losing its most energetic molecules which also contributes to cooling

Water vapour is a gas whereas water is a
liquid and to achieve that change of
state a very large quantity of energy gets tied up
in the
molecules of vapour
in latent form which means that it's presence is not reflected
in the actual temperature ot the air which carries it.
