A spinach omelette isn't strange at all, however I also had an unused
avocado on the counter that was
about to go bad...
avocados and eggs are a slightly
more daring combo.
I have always been hesitant
about the
avocados for breakfast concept but I will certainly be
more open minded to it in the future.
I had no idea that excessively eating one food could give you a food allergy until I read Felicia's eloquent discussion of her
avocado allergy (really, her entire journey of overhauling her diet is fascinating and worth a read) and in doing research since then, I've come across
more and
more anecdotes
about similar occurrences.
But the
more I thought
about it, the
more delicious a chocolate
avocado cake sounded.
1 ripe
avocado 1/2 cup fresh basil, tightly packed 1 1/2 Tablespoons fresh lemon juice (
about 1 lemon) 1/2 teaspoon minced garlic 1/4 teaspoon sea salt, or
more to taste
One of my favorite things
about it is the dressing because it's oil - free and is made with
avocado, giving it much
more nutritional value than your average dressing (especially if it comes from a bottle!)
