I remembered hearing
about chia seeds and curious to find out
more about, I stumbled upon the super Jessica Ainscough's blog which inspired me; her voice echoed everything I felt
about ending our tortured relationship with food from deprivation to indulgence to guilt and instead being able to enjoy every mouthful.
I'm trying to be liberal
about just adding in
more of those (awesome good) things — like pumpkin
seeds, hemp
seeds,
chia, avocado etc — wherever I can... without thinking
about it.
As I got older and
more intentional
about what I was putting in my body I started experimenting with loaded bowls of oatmeal - I would cram these bowls full of ground flax /
chia, hemp
seeds, nut butters, goji berries, fresh fruit, berries and superfoods.
I hope: I measured the
chia seeds before grinding, then only used a quarter cup of the ground product (there was
about 2 tablespoons left over)...... one
more reason why I should stick to weighing ingredients instead of measuring [I blame the scientist in me].
3000 calories is probably
more than most of us need in one day, but if you ate it all in
chia seeds, you'd only be getting
about 1 gram of phytosterols.

Flax has always been considered so amazing because it has
about a hundred times
more cancer - fighting lignans than any plant in the world — until, evidently,
chia seeds were tested.
Although
more research is needed
about the effects of
chia seeds on heart health in humans, one study in rats found that eating
chia seeds lowered blood triglyceride levels and boosted levels of beneficial HDL cholesterol (55).
