I wouldn't serve this recipe to
more than two people
as an
entree, though, three if there is a side dish.
Instead, I gravitate towards lighter fare such
as salads, lightly cooked soups, oat porridge, green and superfood smoothies, fruit, raw vegetables, small amounts of healthy fats (peanut butter, olives, coconut, raw almond butter, raw nuts and seeds, etc.), and
more raw
entrees along with steamed vegetables or the occasional roasted vegetable, legume and grain dish.
If you want to make it
as more of an
entree rather than a side dish recipe, just toss in some tofu, scrambled egg, sliced chicken breast, or noodles (if you want to spend the extra Points), and double the sauce.
As a result, kids there are now eating
entrees like grass - fed beef hot dogs on whole grain rolls, with the ultimate goal of bringing
more scratch cooking, and fewer «carnival food»
entrees, to their lunch rooms.
As Maggie said, once you offer
more than 1
entree a day (we do 16 a day, if you can imagine, with over 75 possible
entrees in a month!)
In development: Some of the items the PAC asked for, such
as sandwiches, a greater variety of ethnic food and
more legume - based
entrees, are being tested now.
Together we papered a long wall with Post-its containing our suggestions, ranging from the easily achievable ---- such
as more legume - based
entrees — to ones we knew were probably still in the realm of fantasy, such
as putting a salad bar in every school.

as well scrap the effort before you even start.
And I've noticed that the Jason's Deli chain, although still offering hot dogs, mac - n - cheese and the rest, has a least improved its children's menu (scroll down to locate it) by offering such sides
as apple slices, carrot sticks and fresh fruit, and
more healthful
entrees like a kid's salad bar and a turkey sandwich in a whole wheat wrap.
This may baffle the die - hard carnivores out there, but I'm the sort of person who's generally much
more intrigued by the «sides» on a menu than the
entree, and I'm often just
as happy with a soy or wheat «meat» product
as the real thing.
And this scenario could easily apply to any chicken - based
entree supplied to schools, such
as chicken soup, frozen chicken burritos, chicken chili, chicken - stuffed ravioli, and
more.
As you know, I've been the person saying all along, if you have pizza every day, then whatever
more healthful
entree you serve next to it is doomed to fail.
For those families with multiple school aged children, what sounds like a small price increase can serve
as a tipping point, driving them out of the school meal programs at the very moment that these programs are working to meet proposed standards for
more whole grains, fresh produce and healthier
entrees.

As for the big picture, Murray said «restaurants can help shape the American eating pattern toward
more healthful ends by moving toward lower calorie items and smaller portions, and including
more diverse
entrees and nutritious sides.»
In retrospect, the increase in Oscar nominations for horror films could be seen
as an appreciation for the
more sophisticated
entrees in a genre that was still largely catering to teenagers who weren't terribly interested in character nuance or tight plotting.
