Balsamic Marshamllow + Thyme - Roasted Strawberry S'mores started as a simple way to use up some leftover berries from last week and turned into something so much
more.
I usually make a
more «rustic» version with roasted veggies tossed with tomatoes, roasted garlic and
balsamic.
Barley Tomato Salad 1 lb tomatoes on the vine 1/4 cup olive oil, plus
more for drizzling cherry tomatoes 1 tablespoon
balsamic vinegar 1 tablespoon coconut sugar 1/2 teaspoon sea salt, plus
more for cherry tomatoes 3 garlic cloves — minced 2 cups yellow or red cherry tomatoes — cut in half freshly ground black pepper 1 cup pearled barley — soaked overnight and cooked for about 20 minutes, until soft, drained and cooled 1/2 cup heirloom forbidden black rice or other black rice — cooked according to package instructions, cooled assorted 3 - 5 heirloom tomatoes — sliced 3 tablespoons chopped mint leaves handful basil leaves — torn about 2 tablespoons each minced dill and parsley — optional
In the back of my mind, I was worried about ruining the most perfect roasted potatoes by adding
more dressing, but I continued with the potato salad recipe which called for a white
balsamic dressing with a touch of fresh dill and marjoram.
Good olive oil and a good
balsamic vinegar — what
more could you want?
By poaching the pears in wine and lemon juice and by choosing a white onion (with a little
more bite than yellow or red) and adding a little
balsamic vinegar to it as it cooked, I toned down the sweetness factor just enough.
You can definitely substitute coconut aminos for the
balsamic — off the top of my head, I don't have a substitution for the mushrooms — you might be able to just skip them and add
more peas and carrots (or just skip them).
This salad is ideal with a thicker - cut bacon (but there's really no need to buy the insanely thick stuff I bought by accident), wild arugula (I find that the leafy bundled stuff has much
more flavor and bite than the bagged / boxed stuff) and an aged, dark and almost syrupy
balsamic that you save for special occasions.

balsamic — So, this is one of these pesky things where I feel it's really important that nobody feel that they need to spend a ton of money to cook well, because you don't.

balsamic vinegar and brown sugar and continue to cook, stirring occasionally, until the vinegar has reduced and the onions have caramelized, 6 to 8 minutes

I added a 1/2 tablespoon
more of the
balsamic and about a teaspoon of ground cloves and used only 1/2 cup sugar.
The orzo, peas, and feta paired quite well, and I liked the
balsamic dressing, as opposed to a
more standard mayo - based pasta salad.
I also roasted the squash with a glaze of
balsamic vinegar and brown sugar, gives it
more depth, I think.
