I decided to make my own vegetable
broth for the first time using the
recipe from The First Mess, and it's so much
more flavourful than store - bought vegetable
broth!

I used
more squash and parsnips (One whole bag) than the
recipe calle dfor and just alittle bit
more broth — it was creamy and thick.
Also another
recipe tip is to cook the quinoa in
broth instead of water for
more flavor!
The original
recipe said you could substitute
more chicken
broth instead of the wine if you so desire, but I think the wine added a lot to the flavor profile, so I wouldn't.
Just enough
broth to cover the roast (the
recipe says use 2 cups of beef
broth, but if the roast isn't covered by that, add
more water until just the roast is covered with liquid).
Pureeing the tomatoes, garlic and onions makes for a very tasty
broth that's
more than just the seasoned chicken
broth in most chicken tortilla soup
recipes.
At the very least, I'd say this
recipe needs some
broth (and perhaps a little
more in the way of spices).
The only things I can think of that I didn't differently: used homemade veg
broth I had in the freezer (I'm vegetarian though my husband isn't and he thought the soup was great) used mixed dried mushrooms (you can get a large amount from costco for not too much - I keep them on hand for all my dried mushroom needs) did a healthy glug of sherry (
more than the
recipe) into the mushrooms when they were done sauteeing added spinach at the end to the soup For the dumplings, the only thing I did that was different than what many would do is use an egg from one of my hens - other than that I made them just as other people did but mine were full of flavor and could be eaten plain.

recipes for a lot of home - made soup.
I added way
more turkey to the
recipe and needed to add
more chicken
broth to compensate.
So I have created a
more time friendly
recipe using a store - bought organic, free range chicken
broth.
I plan to do a post about how to make bone
broth so I'll go into
more detail on all of this when I share that
recipe.
I usually make it a little
more like your chicken
broth recipe, but I like the flavor of this so much better.
