I probably used a
little more curry powder than this recipe calls for in the end, but go easy if you decide to add extra or you will lose that lovely butternut flavor.
Just from glancing at the old photo, I think I reproduced the dish fairly accurately, although I would've used
more curry powder if I hadn't run out.
- Add turkey to pan, seasoned side down, and sprinkle the exposed / unseasoned size with more curry powder
When following the instructions, it was a little too bland for me, but I added about 1/2 -3 / 4 cup more of coconut milk and a
little more curry powder and turmeric, and my husband and I loved it.
Pour in the coconut milk, add
more curry powder, salt and pepper to taste — adjust accordingly
Season the sauce to taste with salt and pepper and add
more curry powder and / or sriracha if desired.
Note on seasoning: You can push the curry flavor of this soup further by adding
more curry powder, plus ground cumin and fresh ginger.
I followed some suggestions from other cooks and added
more curry powder, some cayenne and some coriander.
I added
more curry powder, salt, and pepper for this first attempt.
I will be making this again and will hopefully have
more curry powder.
