I was looking for a darker grade of syrup (used to be considered Grade B, now everything is Grade A) for
more maple flavor and a little less sweetness to use in recipes - this was perfect.

I've also taken to spicing it up with ground ginger, cardamom, cinnamon, and spiking the egg white mix with a dash of orange essence and vanilla extract and also add
maple syrup for
more flavor.
You can substitute pure
maple syrup for the
flavoring or extract, but the
flavor will be much
more subtle.
This year, I wanted to add a couple
more flavors, a Buffalo
Maple that's sweet and slightly spicy and this Garlic Parmesan that's savory and garlicky.

I like dark better (as I like B grade
maple syrup better) because it just seems to have
more flavor and depth.

more nutty
flavor, which was nice, as the 1/2 cup of pure
maple (straight from Canada on my last trip there!)
The nuts will be a little sticky and have a
more intense
maple flavor.
In fact, darker syrup is sometimes preferred for its
more robust
flavor and color — but they are all interchangeable as long as you're using 100 - percent
maple syrup.
Next time I think I'll use a little
more maple syrup, to hopefully make the
flavor more pronounced.
