After making the pizza, extra flaky biscuits, english
muffins, baguettes and many
more (which all taste as
good or
better than their glutenous counterpart) he thinks I hung the moon.
Well muffins have a rougher bigger crumb, and cakes have a softer
more delicate crumb.
The Starbucks pumpkin spice
muffin is
more like a pumpkin cupcake and has a cream cheese filling inside, which, while a
good idea, has sort of an odd, gelatinous texture.
So... I've been feeling a bit guilty about the accolades I gave to last weeks VGFH

I was hesitant to call these
muffins health food because,
well, they're no kale salad, but I figured when compared to some of the other, erm,
more elaborate recipes on this blog, they might as
well be a dang bushel of broccoli.

well, I'll experiment some
more at a later time but these
muffins were terrific.
I love banana
muffins and when you throw chocolate chips as
well as some crumb topping it just makes these even
more awesome!
Mix a little
more and pour into the
muffin pan
wells (preferable silicone as they come out perfectly) about 1/2 way up.
Question - I made these tonight, and they were
good, but
more dry like a biscuit, rather than moist like a
muffin.
This stuffing is slightly
more labor intensive than other recipes, since it has the added component of roasting vegetables, but they add the
best flavor and texture to these
muffins.
Better Batter is what I use when I need a bit
more structure (like cut out sugar cookies since it's a very simple doughs and I don't want it to fall apart at all) and / or a bit
more chew (like gingerbread cake and morning glory
muffins).
First off who doesn't love those mason jars and it's perfect for valentine's day coming up and not only the color of the shake but the raspberries and sprinkles add so much cuteness to the shake... looks so
good and I can't wait to try it out, but I love putting protein powders in my other foods like my pancakes or
muffins, kinda makes them
more filling and a little
more tasteful in a way.
My Mother actually lightly soaked her
muffin with sweet wine (Moscatel, which is a typical Portuguese wine) and said it brought out even
more the chocolaty flavour (it would also go very
well with either Port or Madeira)!

Good but not tried yet: Add Pecans Add Raisins Add Pumpkin Puree (I like adding fine black pepper to this ingredient for
muffins!)
These
muffins might have
more fruit than batter, which makes them incredibly moist, and also makes me feel
good about eating them.
one thing
more i baked them in three batches because i had only a 6 cup
muffin tin and keeping the batter to rest for sometime made the texture
better.
Then for a different twist, I replaced the said cinnamon chips with peanut butter chips, because peanut butter and banana goes so
well togeyher, but wait there's
more; I also added the chocolate chips called for in the recipe, because not only does peanut butter and banana go
well together, but so does banana and chocolate, and chocolate and peanut butter, and all three just makes a glorious trio of
muffin perfection!

I really would live on
muffins if they provided enough vitamins and minerals to keep my brain functioning

I just love me a
good muff, and you're right about needing to eat
more than one in a sitting... there's just no such thing as a safe

I used the measured amounts to fill the cups and had enough batter left over for 3
more muffins without filling and the 12 original ones rose
well over the edge of the cups.
I'm still experimenting on the right ones for
muffins since you need
more batter per
well, but those will do just fine for cupcakes.

muffins have a full pint of blueberries in them, because the

As for the differences in this «
better»
muffin recipe: 1)
more pumpkin puree, 2) no banana, and 3) add chickpeas.
For a fluffier
muffin, the recipe could probably stand an extra egg or
more baking powder, but this is a perfectly
good handheld gluten free peachy bite.
Although either almond or cashew butter is fine, for these I generally prefer using cashew butter if possible as I think there's
better pumpkin flavour and also the
muffins are lighter in colour,
more orangey, when made with cashew butter than almond.
Before that one, no matter how much I spent on a
muffin tin, they never worked
well — even greased — for
more than a couple of batches.
The granola / oatmeal cookie recipe w / raisins and mini bits became even
more flavorful, the breakfast
muffins, already a family / friends favorite, are now even
better.
