I tweaked it a bit (
more nooch, more tomato paste, some curry powder, hickory smoke salt) and while I probably could have blended the sauce a bit more, it turned out GREAT.
Might add
more nooch (we really love the nooch in this house) and maybe even a little more kraut.
I left out the miso, subbing
more nooch instead, with great results.
Not exact matches
The changes I made were pretty basic: onions instead of shallots (since I always have them), upped the garlic (because, duh,
more garlic always), upped the wine and added a little
nooch for thickening.

Okay, so the
nooch is pretty subtle in there flavor wise... it
more or less adds a thickness to the sauce.
Miso gives the sauce even
more savory flavor, and hot sauce and
nooch add up to lots of cheezy goodness.

Eventually I became so obsessed with eating an everything bagel with vegan butter and
nooch that I was eating it a few times a week... or

I used a teeny bit
more lemon juice (by accident) and it was still great... I think it reduced the «powdery» flavor that
nooch has (although I love it).
