You can definitely substitute coconut aminos for the balsamic — off the top of my head, I don't have a substitution for the mushrooms — you might be able to just skip them and add
more peas and carrots (or just skip them).
I did add
more peas and carrots and some diced celery and also some diced up vegan chik»n nuggets and also sauted some onion with the garlic for the tofu scramble (I don't have any green onions).

I made this with
carrots instead of squash
and instead of coconut milk used a bit of stock
and half a block of creamed coconut so it was
more of a spicy
carrot puree on the sweet potato (
and substituted the chick
peas for green
peas plus added some spinach)
and it was delicious.
Next time I'll try it with
carrots and more peas.
Some parsley,
peas,
and carrots are okay, if you want a little
more.
If you want to go a little
more traditional, I think this would be great with tofu
and a veggie combo of: mushrooms, bamboo shoots, red onion, red peppers,

The tomatoes are taller than I am (that isn't saying much), the
carrots are doing wonderful (see previous post about
carrot cake cupcakes), the bean are going for broke,
and we have
more peas than anyone should ever have at once.

Fast forward six or so years
and here I stand, proud as ever to eat a primarily plant - based diet that consists of so, so much
more than
peas and carrots.
I simplified this recipe even
more in a lot of ways, by using frozen bagged
carrots,
peas,
and corn instead of celery
and carrot, I skipped the sautéing part
and just mixed the raw onion
and garlic with the mixture, I skipped the walnut toasting part
and just added it in, I did all my chopping in the food processor, I used the food processor to grate the apple
and used an apple instead of apple butter in the sauce
and just processed it til it was slightly chunky.
Ones that have
more interesting or fun things than my daily spinach, tomatoes,
carrots, cucumber, dried
peas,
and goat cheese.
Whatever you find in your markets now could be easily substituted if you keep the heartier root vegetables like
carrots and potatoes in added in the beginning
and the softer,
more delicate vegetables like asparagus or
peas added towards the end so they don't overcook.
Add
carrots, snow
peas,
and tofu to rack,
and steam 2 minutes
more.
